As noted, gnucash can do the general ledger part of inventory account.
But there is a LOT more that an "inventory system" would be doing.
A full "business system" would have a number of parts, one of which
would be General Ledger" (the part that gnucash does). These different
parts would be communicating with each other, sending and receiving
"feeds". Note that while most businesses would all have some parts in
common (like general ledger) many businesses would need some that other
businesses don't.
