To answer your question as to whether or not the version in the Ubuntu repo, "1:5.5-1.2build1" is 5.12, the answer is no. It is version 5.5 of GnuCash. You can easily verify by executing the command "gnucash-cli --version" in a terminal. Versions available in OS repositories, *especially* Ubuntu's, are typically behind current releases.

This is one of the reasons the GnuCash team makes the Flatpak versions available. And why an effort has begun to offer Ubuntu GnuCash packages through the https://launchpad.net/~gnucash/+archive/ubuntu/ppa/ PPA. These packages are *not* the official Ubuntu/Canonical packages, and any issues with a package from this PPA should be relayed to the "Gnucash packaging team" (https://launchpad.net/~gnucash).
