Do you have an attached non-retina monitor and that’s where the truncated menus
appear?
If so it’s a Gtk bug that goes back a couple of years.

For whatever reason, the bug that wasn't there in GNUCash 5.10, appeared
in 5.11 has now gone in 5.12.
