Got it!  Thank you, David.  Found my settings.

for flatpak:
  .var/app/org.gnucash.GnuCash/config/glib-2.0/setting/keyfile

Just out of curiosity, these 'settings', they are global for this 'user' ? So, if I set a setting such as;

Edit-> Preferences-> Accounts-> Separator = 'xyzzy' (normally ':')

Then _any_ gnucash file I open will use this separator setting, yes? Just curious if there are instructions to maintain a 'settings' keyset that is also related to the gnucash file ? Just wondering out loud.
