You want GNC_DATA_HOME=<somewhere>. GNC_HOME is the root installation directory 
and your crash report shows GnuCash telling GSettings to go look there for its 
schemas. It crashes when it doesn’t find them. We apparently need to prevent 
users from setting that in the environment.
