As Adrien just hinted and several others have already suggested, do not try to set the width of the description column until you have the overall program window set to your liking, the register display style set to your liking and all the other columns set to your liking. There is only one column setting per ordinary account register.
Starting in release 5.something GnuCash also keeps unique settings for "with child" register types.
