Hello,
My bank does not offer funds status in OFX but in a plain TXT file. I
generated a script to convert it to QIF, resulting in something like

I think OFX can handle this kind of transaction, with fee/taxes but
the ones I wrote are ignored by gnucash. Can gnucash handle that info
in OFX? And where can I get a good OFX example similar to my case?
Yes, GnuCash can import OFX files.
Be aware that your example above is a QIF format, and OFX format is
different from QIF.
I did a search for "OFX example file" and found a few useful links:
* Example OFX file <https://gist.github.com/jvz/2837829>
* "where to get sample ofx files for testing?" question, with several
useful answers

* Open Financial Exchange, Wikipedia article

I hope that helps,
