I was able to sort this out. The relevant steps for me was:
sudo flatpak install flathub org.gnucash.GnuCash
sudo flatpak override --env "LANG=de_DE" --env "LANGUAGE=de_DE"
org.gnucash.GnuCash
sudo flatpak update --subpath=de org.gnome.Platform.Locale
sudo flatpak update --subpath=de org.gnucash.GnuCash.Locale
flatpak run org.gnucash.GnuCash
That said, both Platform.Locale and GnuCash.Locale had to be updated. I
think this makes some for someone with a deeper understanding of Flatpaks.

here. The above trail seems straight forward. What am I missing.
