Also a brief feedback report.
I tried it. It certainly is different. I didn't explore reports at all, I never
use any. Just the display of the registers. Two things struck me about the
display:
• List of accounts on the left side was much longer. If I added any new
open accounts I would have had to scroll whereas with the standard display I
have room for opening a bunch of accounts in addition to the ones I keep open
all the time.
• The "×" symbol to close accounts was huge and dominating, compared to
the subtle grey symbol on the standard version.
Finally, while there was a gtk file in the location you identified for MacOS,
the one that mattered was in my User Library not the System Library.

BTW, Under %LOCALAPPDATA% a/k/a ...\AppData\Local there is no GnuCash
folder. (I could be wrong, but I don't think GC 5.x changed the location
from 4.x.) The Windows locations you gave should be
%APPDATA%\GnuCash\gtk-3.0.css (i.e. ...\AppData\Roaming\GnuCash)
