I reported a similar problem on X.org with Ubuntu 22.04 in another
thread, but it is a different icon---a generic grey gear. From what I've
found and suspected, this is a flatpak sandbox issue. If it can't find
the specified icon (or access it) it will use that one.
What is odd, is that it initially found the GnuCash icon then suddenly
could not. (it also initially had no problem opening the book file, then
suddenly couldn't find it either, but I solved that one by using a full
rather than relative path in my launcher.)

Adrien

It was supposed to be a Wayland only issue. But if you search the
mailinglist archives for "Wayland" it appears to bother X.org users
also. If you search online for "generic Wayland icon" you'll find many
more reports.
In any case, the problem is related to technicalities surrounding the
window manager.
