How did you "install" gnucash on your mac mini ? You aren't running directly from the DMG which is probably read only are you ? You need to open (Mount) the .dmg file you downloaded by double clicking on it and dragging the contents to your applications folder and run it from there. I also created a "Gnucash 5.0" Folder in Applications and copied the app and its associated files there - see screenshot below for details...
Check your settings under Privacy & Security >> Files & Folders >> Gnucash.app - you have to give the app permissions to access your file system. I ended up giving mine access to Desktop / Documents / Network Volumes and Removable Volumes but if your Gnucash data file is in your Documents folder that should be sufficient to get you going. Your saved reports are in a file called saved-reports-2.8 which you should find in the ...\appdataRoaming\GnuCash folder on Windows (C:\Users\<USERID>\AppData\Roaming\GnuCash) - you can just copy that over to the Mac - my saved reports are in /Users/<USERID>/Library/Application Support/Gnucash on MacOS 27.2 which I assume is the standard location. Anyway worry about that after you can open Gnucash ok, 1 thing at a time. Oh another quirk on MacOS - if you have multiple gnucash data files for whatever reason, double clicking on a Gnucash file that isn't the last one you had open ALWAYS OPENS the last file you had open. Youe need to use File >> Open on MacOS. Hope this helps you get sorted. Cheers David H.
