Kushagra, The best way is to make use of environments feature where you can 
customize configuration/details about the infrastructure. And for 
Build+Unit Tests you can maintain one pipeline, Deploy+Sanity another 
pipeline and for Automated Tests(UI tests, rest api tests etc.) you can 
have it in a pipeline. So overall there will be three pipelines and 
unlimited number of environments or 3 environments in your case(test, 
stage, prod).
