Let's explore cuisines from some of the countries around the world in alphabetical order. Let's start with the "A" series: Afghanistan:-Afghanistan's cuisine has been influenced by Russia, India, China, and Persia, and its dishes star the rich, sweet, and tart tastes of cardamom, cilantro, rose water, and homemade yogurt. Here is one recipe that is similar to a Goan Pullao. Quabili Pilau recipe 1/4 cup oil, 1 onion (diced), 2 pounds lamb, 1/4 teaspoon ground cinnamon, 1/4 teaspoon ground cloves, 1/4 teaspoon ground cardamon, 1/2 teaspoon ground cumin, 1/2 teaspoon garam masala, 1 teaspoon salt, 2 cups water, 1/4 cup vegetable oil, 2 carrots, 1 teaspoon sugar, 1 cup raisins, 1 cup blanched almonds, 2 cups basmati rice, 1 teaspoon salt, 1/2 teaspoon saffron, 1 cup water. In a heavy pot, fry the onions until golden brown. Cut the lamb into bite-size cubes and add to the onions. Add salt and spices. Add water. Mix well, cover and cook until the lamb is done. Meanwhile cut the carrots into toothpick-size pieces. Fry them on vegetable oil with sugar until tender. Remove from oil and drain on a towel. Add raisins to the oil and fry until they swell up, drain on a dry towel. Add almonds to the oil and brown, remove and drain on a dry towel. Once the lamb is done, remove from the water and set aside. Add rice to the remaining lamb stock. Add salt and water. Boil until the rice is done for about 20 minutes. Once the rice is done, remove from the pot and put it on a oven-save caserole. Place lamb on top of the rice, cover and cook on 300 degrees for about 20 minutes. Place the cooked lamb on a plate. Top with the rice and carrots, raisins and almonds. Healthy tip: To cut down on fat, eliminate the frying process and instead, lay the julienned carrots, raisins and nuts on a lightly oiled baking tray and put in the oven at 350 for about 15 minutes. Serves 4. --------------------------------------------------------------------- ____ ____ ____ ____ ____ ____ ||g |||o |||a |||n |||e |||t || Issue compiled by ||__|||__|||__|||__|||__|||__|| Frederick Noronha |/__\|/__\|/__\|/__\|/__\|/__\| [EMAIL PROTECTED] Copyleft Goanet 2006 Creative Commons http://www.creativecommons.org You may reproduce this ezine in its entirety, with credits retained.
