Learning to use the fruits that are available in GOA ,


                     ........Carambola ,

.........can be made as an every day treat. most commonly known
as star fruit here in the Uk , carambola's have a crisp apple-like
and tightly citrus flavour. Their beautiful shape makes them perfect
for decorating deserts , such as pavola or fruit salad, and their sharp
flavour go well with savoury dishes too. The full flavour develops
when they are lightly poached in syrup until just tender.


How to prepare

The fruit is ripe when the skin is yellow and the ridges are brown.
They do not require peeling , simply slice off the ridges, rather
like de-stringing a runnerbean, and slice the fruit into stars. Store
star fruit in the salad compartment of the refrigator.

tip . Slice and serve in drinks .......

Serves 4

Carambola in Lemon Grass Syrup

55g(2 oz) castor sugar
2 salks lemon Grass
1 whole star anise
4 carambola

Place the castor sugar in a sauscepan with 300ml ( 10fl oz)
of water.Heat until sugar is dissolved.Crush the lemon grass
stalks and add to the syrup with the star anise. Simmer for
3 minutes , then add the sliced carambola and poach until just
tender but still whole.Leave to cool . Remove the lemon grass ,
 but leave the star anise in for decoration.Serve the sliced
carambola with a little of the poaching syrup , or add to other
fruit for a fruit salad.The rest of the syrup is delicious in cold drinks
and combined with gin or  vodka and sparkling water an unusual cocktail
