Hello everyone, � Hope you all had a good week. I am not sure if I mentioned it before, but I am in the process of writing a Goan cookbook which should be out sometime mid year 2004. I have been trying out a lot of dishes lately and of course my family gets to do all the taste tests which they are more than happy to oblige.
Here's one that I tried out and I promise you that when you make them you will not have any leftovers. I am talking about Pan Rolls - my mouth is watering just typing this recipe: So here it is: PAN ROLLS: Ingredients: 1 cup all purpose flour 1 large egg 1/4 cup milk 1/4 cup water A pinch of salt Quarter spoon sugar Previously prepared mince 1 more egg (beaten) in a seperate bowl Breadcrumbs mixed with a pinch of turmeric pwd. Make a well in the center of the flour; drop in 1 egg and mix with a fork.� Slowly pour in milk and water as you are mixing to form a thin batter.� Set this aside for about 10 minutes or so.� MAKING THE PANCAKES: �A very good non-stick pan is recommended for this process.� Lightly spray the pan with PAM(oil spray)or lightly coat with vegetable oil, pour in some batter with an ice cream scoop.� Hold the handle of the pan and rotate the pan in order to spread the batter evenly into a round paper-thin pancake or a crepe.� Some people like to cook it on both sides but there is no need to flip it over.� Cook the rest of the pancakes in the same manner and keep aside in a warm plate.� MAKING THE ROLLS: Take one pancake � put some mince in the center.� Tuck in the sides and roll into a log.� Dip in beaten egg and roll in breadcrumbs mixture � flatten the roll slightly.� Pan fry in some oil on a medium flame until lightly browned on both sides.� There you have it � out of this world pan rolls.� Perfect for unexpected guests Happy eating! - Daisy __________________________________ Do you Yahoo!?
