Hello everyone, Hope you are all having a good week. I received several requests this week for a very spicy pork dish called �Pork Vindaloo�, so here I am presenting yet another delicious recipe to please your palate. As always, send me your feedback. Happy eating. - Daisy
PORK VINDALOO Marinate about a pound and a half of salted pork meat (some people like a lot of fat on their meat but for a leaner version, cut out the fat) in the following ingredients for about 8 hours or overnight. 1-tablespoon of coriander powder 1-teaspoon cumin powder 2 teaspoons chili powder (add more if you like it hotter) Half-teaspoon pepper 1-teaspoon mustard seed 5 to 6 cloves garlic (crushed) Half-inch ginger (crushed) Tamarind paste 1-tablespoon vinegar ************************************* 4 onions (thinly sliced) 4 garlic cloves (thinly sliced) 4 green jalapenos (chilies) (slit into 4) A pinch of sugar Heat some oil on medium heat. Saut� the opinions and garlic until the onions are caramelized. Add the marinated meat and saut� for a few minutes. Add some water, cover the pan and cook on medium to low heat for about 45 minutes or until the meat gets tender. Add the green jalapenos & sugar during the last 10 minutes of cooking time.
