Am not quite sure about the pay-for-only-the-snacks-you-consume, but to the best of my knowledge only a few Mapusa restaurants have this unique feature. In other restaurants you have to order the snacks. In these Mapusa restaurants the snacks are served without you asking!!
But there are lots of other things that makes Mapusa unique, BESIDES the Friday Market.
A few:
1) Khotokhotem (hardboiled jaggery with nuts, ginger etc - like hard chikki) - Only available at Anand's
2) Chonnevale - Gramsellers near Aldona Taxi Stand
3) On-the-spot tailors (in passages of Municipal Market Front Facade - mostly stitching flimsy garments for 'hippies')
4) Abolim and local flowers section (unlike the normal florists section in other cities)
5) Cheap cotton garments section (mostly T-Shirts)
6) Only-Silver Merchants (as opposed to Gold & Silver elsewhere)
7) Traditional Baker section (specially the unique God Poye)
8) Coconut Jaggery
9) Moundolim Kellim (similar to Moira bananas)
10) Shops selling only traditional Ropes and Cords (razu & summ)
11) Entire clay pottery section
I am sure Mapshekars like Alfonso Bond Braganza, Miguel Braganza etc. will be able to add lots more to this list. The criteria of course should be that the particular product/service is unique to Mapusa and is not specific to the Friday Market, which is a category in it's own.
