Almost akin to the chateux of France, stringently claimant to "appellation controle�" of quality wines, there are pockets of genuine cullinary recipes, family-treasured, of the Ibero-Indian saussage in Goa.


But for their relative mass-production quality give those from Goa Velha. Just like the Moira bananas, they are matchless. And, let not the Cecils of the day dictate me otherwise. Hear, my boy?

Correct me if I'm wrong, but I guess a lot of people go to Salcete to
collect sausages because "saxtichim cheurisaum, gaiche mas misol asna."

Why do you go all the way from Baga to Salcete to buy "Saxtichim cheurisam"
when you can buy good "cheurisam" from JOAO INACIO in Mapusa, Bardez?  BTW,
he is 92 years old and in bed now!  Every time I am in Goa, I buy sausages
from his residence, pay a visit and say a hello to him in his old house.
His brother now runs the "cheuris" business.
