It is Todiwala and he did a stint at the Taj in Goa. Check his website - http://www.cafespice.co.uk/index.htm for his photo, biography (he was awarded the MBE), recipes, etc. He employs quite a few Goan cooks in his chain.

Some tips:

His book costs £18 in the UK and the equivalent of less that £6 (Rs 450) at the Hotel Mandovi bookshop in Goa. It has recipes like Crab a la Goa, Fish Recheade, Goan Fish Curry, Galinha Cafreal.

The restaurants specialises in fusion cooking and you will find "wild" boar, "wild" salmon etc at wild prices and recipes toned down for the benefit of the "tourists". However, they have a special staff menu for the day - food prepared by the staff for the staff - the real McCoy. Ask what is available on the Staff menu.

I was introduced to the restaurant by a Jewish bookseller soon after it first opened, about ten years ago. They now have a branch in Highgate.
