The typical products of this area are grain, cheese and olives. Meat is more consumed than fish, especially prok meat. Sericaia is a dessert. SERICAIA: 1 ltr milk, 6 eggs, 125 g flour, 250 g sugar, 1 tsp Cinnamon powder, 1 lemon rind, butter. * Beat the egg yolks well * Add the milk gradually and keep beating the mixture * Mix the sugar with the flour and add this to the milk and eggs * Put the casserole with the mixture on a low heat, whipping with a hand whisk, so that it won't get lumpy * When it gets the consistency of thick cream, remove it from the heat, but keep whipping it until it cools a bit * Whip the egg whites until stiff and add them gently, to the cream, just folding them in * Pour the cream into an oven-proof platter and sprinkle with cinnamon powder. * Bake it in a medium hot oven.
