March 7, 7.45 am St Michael's Taleigao. --------------------------------------------------------------------- TODAY'S SPECIAL RECIPE Zucchini stuffed with mince (Goan style) --------------------------------------------------------------------- INGREDIENTS: 10 small zucchinis (courgettes). Quarter kg beef mince, boiled. 1 teaspoon cumin powder. 1 teaspoon pepper powder. 2 green chillies, minced. 1 onion, minced. 1 tablespoon oil. 1 egg beaten with little salt. Bread crumbs. METHOD: Heat oil in a pan and fry the minced onion until brown. Add green chillies, cumin and pepper powder and fry for another five minutes. Then add the boiled minced meat and mix well and dry cook for another 10 minutes. Remove from fire and keep cool. Cut the zucchinis lengthways into half and boil in water with little salt for 15 minutes. Remove from water, when cool, scoop the centre and remove the pulp. Then fill it with the mince mixture, stuffing well. Brush it with egg batter and coat it with bread crumbs. Heat a frying pan, brush little oil and fry the zucchinis on the side coated with egg and bread crumbs to slightly brown. Serve with plain rice and any curry. Also great for parties. Reading such posts allows one to get a good picture of the political dynamics which influence governance in Goa. Venantius presented an unusual article on the artist Moebuis, and a piece called Congeries of Lust. We learn that Moebuis is a phenomenal comic book artist who is known for his work on science fantasy. We also learn that Congeries of Lust relates to drawings concerned with attacks on Christians in India in the late 1990s. An account of scams that tourists have to face in Goa informs us, in particular, about the awful experience of those who have had to be hospitalised. There seem to be exorbitant charges for minimal services. Also, customs officers at Dabolim airport seem to have clever ways of taking items from tourist baggage such as trinkets, pens, and cigarette lighters. These experiences must give many a tourist a jaundiced view about the Paradise that is Goa. If a crescendo can be reached it is perhaps now about the issue of caste among Catholic Goans. When there is such a crescendo, it is often an indication that the discussion will soon move on to another major topic. Therefore it is worth making sure that one does not miss this most lively of debates.
