I don't mind all Goans slamming Parrikar for his politics and policies as CM (that's part of the game). I hear that vegetables are not very popular here. Here is a chicken recipe that is very tender and mouth watering. Pandhra Rassa - Chicken in white curry 1 kg. chicken, cut into pieces, 1/2 cup dessicated coconut, 2 cups thick coconut milk, 1/2 cup plain yogurt (curds), 2 medium onions, chopped fine, 1 heaped tablespoon poppy seeds, 1 heaped tablespoon coriander seeds, 1 tablespoon cashew nuts, 1 tablespoon raisins, 2 teaspoon red chili flakes, 1 1/2 teaspoons black cumin seeds, 4 cups water, 12 cloves, 8 cardamoms, peeled, 1 inch ginger, 12 flakes garlic, 1/2 stick cinnamon, 3 red chilies, cut into pieces, 3 tablespoon ghee or oil, salt to taste. For the Koshimbir: 2 tomatoes, chopped, 2 onions, chopped, 2 cups plain yogurt (curd), 2 tablespoons grated coconut, 1 green chili chopped, 1 tablespoon coriander leaves, chopped fine, sugar and salt to taste. Mix all the ingredients well and keep aside in the fridge. Grind the ginger/garlic to a paste. Apply ginger/garlic paste to the chicken and set aside. Grind together desiccated coconut, black cumin seeds, poppy seeds, coriander seeds, red chili flakes, 8 cloves and 8 cardamoms. Heat one tablespoon oil in a heavy bottom pan, add he the remaining cloves & cinnamon, red chili pieces, cashew nuts and raisins. Stir and fry till the cashew nuts turn golden brown. Add the chicken and fry well, lower heat and cover the pan. Cook till almost done. Heat the remaining oil in a large pan and fry the onions till they become translucent. Add the ground masala paste. Keep stirring till well fried. Add curd and stir for two more minutes. Add the chicken and water and bring to a boil. Add coconut milk. Stir well. bring to ta boil and remove from hat immediately, otherwise the gravy will curdle. Serve hot with plain white rice and the traditional Koshimbir.
