Curious observation, I should say. Come to think of
it, in most establishments I've been to in Goa,
including Mariott's, I haven't seen ANY waitresses. In
fact, there appear to be no waitresses at all across
the Indian subcontinent.
Yes, there were waitresses at one time, pre-1962, at
least at the Eskimo, an ice-cream parlour, a little
away from Confeitaria Italiana, in Panjim, who were
well-decked in pink or azure dresses with little white
aprons and starched caps. That sort of European-style
attendance in Goa seems to have died a long time ago.
