Jorge,

FYI - In 1813 the British occupation of Goa ended and Portuguese rule
resumed. Portugal being a British ally since 1661, her possessions in India
were secure. The British again occupied Goa in 1897.

Its no wonder then that we have some very successful, business-savvy
multi-millionaire Shastikar bakers in North America. They have made their
fortune by sticking to the knitting or kneeding in this case - Sourdough Pao
! Maybe some of your Bardezkars are still sticking to their daily Kundia
Bhakor - where's the commercialization windfall ? In these days of Oat Bran
Pita Bread, our Sashtikar bakers are primed to take advantage of the heavy
demand once again ! This time it may be Sourdough Oat Bran Pita - the
tastier, heallthier alternative !

BTW our Sorpotel in Salcete is also zestier than the bland stuff they serve
with much pride in Bardez - goes great with with the Sourdough Pao or the
Sourdough Oat Bran Pita !

Best Regards,

Dr. Carmo D'Cruz,

Best Regards,

Carmo
