Sorry Albert,

You need to brush up your Konkani usage - BUTCH (Hog Maws in Southern USA) 
is pig's stomach and not small intestine (Chitterlings in Southern USA - 
also includes large intestines). In Konkani,  small intestine is called 
"Dakte GAINDOLI".

Some times in the Goa villages, the BUTCH is blown up like a balloon and the 
youngsters play soccer with it - Of course it is not edible then !

You may note that this dish (Tripa in Portuguese, Tripe in English)  is 
regarded as the ideal cure for a feni-induced hangover in Salcete !

Dear Goannetter
Butch is not pig's stomach but small intestine. That intestine has to be
thoroughly cleaned with water till all the excreta is removed. Then it has
to be made inside out and rubbed with salt and leaves of sour lime to remove
any excreta sticking to the walls and also to remove the smell. Then the
intestine has to be cut into small pieces. I think the sorpotel massala will
do...........
