If you ask for Mutton in the USA or Canada, you will be met with blank stares.
The reason is that Mutton which is the meat of sheep over one year old has no demand. Lamb on the other hand which is the meat of sheep under a year old is both popular and a little more costly than good beef like Grade AAA or Angus. Goat meat made popular by Caribbean communities is now the meat most in demand. The flesh is lean because they are till today put to graze rather than artificially fed, it has no odour like that of older sheep and it is tastier than beef or lamb. Roland Francis Toronto.
