Great demonstration of pig cutting and naming of the various parts that you 
come across when buying the meat at the butcher section of your favourite 
supermarket.

The short fillet knives and other longer cutting knives used are so sharp that 
some butchers use chain mail under their garments while working, to prevent 
grievous injury in case of slip during a slashing moment that might penetrate 
the butchers body  and cause grave organ damage.
