PART 3 Bizarre *Goan sausage *C*horise*
Both the Portugese and more recently the Spanish lay claims on CHORISE ….So why is it called Goa Sausage. The Goans from the enclaves …from Daman, Dui and Goa PERFECTED THIS delectable. Dish and made it their own ! See the Wikipedia site below I wish to hypothesize ….Way back Goans were not too much in favour of killing a cow in a Hindu dominated society….but pigs were different they were manageable, they littered in abundance, there were wild boars. When I was about 9 years old , I went with my Dads cousin on a boar hund. There was a forest across the Kiswaddi River, Oh yes he killed a boar, dogs scented this unfortunate boar and barked him out into the open. The fallen boar was cut into bits by large machetes Large stiff wicker baskets carried by two men took the trophy, across the dam. Past the church to our Grandfathers house the boar was cooked and roasted in a different way !! Back to the Goa Chorise …Goans who returned to their homeland every two years or so had to carry a supply of Chorise ..packed and sealed in Petrol tins having a volume 40 litres were packed in wooden crates. Similarly there was a par of jars full of FENI, Smaller boxes for carrying PORT Wine in bottles tightly packed with wicker cages, there mango and related pickles and sweets from Guavas, Ponos, Tamarind etc. Clothes, hand bags, hats table clothes, bedsheets and bedcovers went into mental trunks labeled boldly :::CPM:::My dads initials. The Second World War bought a lot of hardships ….so in Dar there were a couple of Goan piggeries, one close to the Farm of the two Noronoha Medical Doctors …I do not remember whether their wives were with them….today the Shamba of the Noronha is the site of the Diamond Jubilee Hall owned by none other than the Aga Khan All this staff on Tanganyika/Tanzania is not found in any text book.
