Given the tough time local small businesses have to cope with, back in Goa, I sometimes appreciate the work they put in.

While scrumming around for a snack in the kitchen, I came across this packet of "Goan caldine masala". Fifty grammes for Rs 18.

It contains a mix of spices, coriander, pepper, cummin seeds, tumeric etc.

How does one prepare it? It sounds simple enough, that even someone profoundly ignorant about the cullinary arts like me might be tempted to try: For quarter kg cauliflower/tendlim/pumkin, add 250 gms of prawns. Add 1.5 tablespoon of Pat's Goan Caldine Masala, two green chillies, two large onions, a piece of ginger, six flakes of garlic, one teaspoon sugar, five gm tamarind an done large coconut. Grind all to a fine paste. Saute this mixture in two tablespoons of oil till mixture leaves the side of the pan. Add two cups of water and bring to a boil. Add previously boiled vegetables and prawns and salt to taste.
