I have been reading this discussion about " poder" and goan bread. Do you guys 
know who bakes the bread in goan bakeries?

I was on a holiday in Goa recently and bought bread early in the morning from 
usual delivery boy  on the cycle . He could not understand a word of Concani. 
Because he was a tribal from Jarkhand . Interestingly he told me that he bakes 
the bread and then delivers it. By the way he did not know anything about 
baking bread until he migrated to Goa

Later on I asked the bakery owner  about the incident and was told that most 
bakery workers in Goa today come from Jarkhand.

I am sure  while transferring the skills there was something which went amiss 
because the bread does not the same anymore!
