Albert writes:- There are two types of Jaggery. Coconut jaggery and sugar cane
jaggery. In the market one notices two types of coconut jaggery too. One is
black and slightly bitter to taste and the other one is light brown in colour.
The latter is mixed with sugar cane jaggery .While preparing this a mixture of
coconut juice and cane sugar is heated till it melts and forms into a liquid
and then the liquid is put into moulds. Most of the catholics used coconut
jaggery to make sweets. Cane jaggery is also used for the same.
One may not be aware that along with cane we would get syrup made from sugar
cane and sweets sticks made from sugar cane. Syrup was called mel and the
sticks were called belio.
