Guess it's different motives for different people! Primarily belief (or a perspective) of some kind... In my case, ca. ten years ago, I read an animal liberation magazine that came in from Australia. Their arguments seemed fairly logical then. In addition, it also makes ecological sense to be veg. In my case, absolutely nothing. When travelling, I've eaten pork in Malaysia and Coorg (Kodagu), at restaurants of Chinese (about the most affordable food!) and practising Hindus. Inspite of my above beliefs, Goan "vegetarianism" being what it is, I often end up eating fish in Panjim. (Nothing like a well-prepared, speedy, nutritious and inexpensive Gujarathi or Udupi thali though.) Since the kids still treat "daddy" as the garbage can, I end up eating an occasional piece of chicken, and absolutely nothing "is the sequel" whether this is unknown or known. My family is non-veg, which means I end up fishing out the curry minus the meat for lunch or dinner. There's no guarantee whatsoever that I'm not eating some beef unbeknowest to moi. Still no "sequel". I must be one of the "impurest" vegetarians. But I can still go round, sneering at the rest of the world (most of them, that is) knowing that my lifestyle is damaging the planet, but still not killing as many living beings as done in my younger carnivore days.
