Sorpatel - Spicy Pork Gravy Sorpatel is a regional dish of Goa, cooked on special occasions. It tastes better as it matures. Every recipe is different according to the individual's taste. It should be cooked at least three days in advance and should be heated once a day to bring out its taste. It goes well with pullau and sanna.
Ingredients 1-1/2 kg/ 3lb 3 oz pork belly 1/2 lb lean pork 1/2 lb liver 1/2 lb heart 1/2 lb kidneys 3 large onions 20 Kahsmiri chillies, de-seeded 1 teaspoon cumin seeds 10 peppercorns 12 cloves 1-1/2 teaspoons turmeric powder 6 green cardamoms, powdered 1 pod of garlic 1-1/2” piece ginger 2 x 2” pieces of cinnamon 2 tbsp feni (optional) 3 tablespoons oil vinegar and salt to taste Method 1.Cut the pork into large pieces. Boil it with enough water to cover the meat and cook for 30 minutes. Spoon out the meat and leave aside to cool. 2.In the remaining stock add the liver, heart, kidneys and boil for approximately same time limit. Add water if required. Reserve any stock that is left over. 3.Grind all the spices in vinegar to a smooth mixture. 4.Cut the pork and other ingredients into small dainty cubes. 5.Heat some oil in a pan and fry the pork fatty pieces, then lean pieces. Lastly fry the liver, heart, and kidney in the remaining oil. 6.Heat the remaining oil in a large pan. Fry the onions till brown. Add the fried meat to the pan. 7.Then add the ground masala and stir well to coat the meat. Add the reserved liquid. Simmer on very low heat for at least one and half-hour, stir occasionally. Slow cooking is very important. 8.Add vinegar, salt and feni (optional). Cook for few minutes. Cool and leave aside for a day in the refrigerator. 9.On the next day, heat through on a low fire and bring it to boil. Adjust seasoning, if necessary. 10.Continue the process on the next day. The dish is now ready to be served.
