Doc, If ever you are in Texas and your host offers you Swan, ask just one question: Was the Swan run over or shot? Swans in Texas are escaped birds from decorative ponds and it is illegal to shot them. I know that very fact may make the eating more exciting to some but the real danger is that, invariably, some buckshot does not get cleaned from the flesh and when you bite into it, well, I will leave it to your imagination but the taste and texture of lead buckshot is something else. On the other hand, it is not illegal to run over a Swan. Since the method of dispatch is usually an old, two ton, flatbed truck, I have been told that this method also tenderizes the meat.
