CBS did a little story: turns out it is derived from hyde, not hooves.
I left me with an idea, use it in place of skin, when fixing pork. I relish the 
flavour and consistency skin imparts, but it does leave some people feeling 
squeamish, and there are concerns over fat, which can actually be scraped off.
  I plan on testing lemon gello and the neutral original.
