Well, that didn't work as I had hoped it would.  But whatever.

Anyway, the answer to this question depends on which portion of the
Search API you're using and what you mean by "specify the country".
If you are just wanting to specify what country results are coming
from, then Web and NewsSearch, for instance, offer
the .setRestriction() method which will pass parameters.  With
NewsSearch, you can use searcher.setRestriction({geo:'US'}); .  With
WebSearch, *I think* you can use
searcher.setRestriction({cr:'countryUS'});  You can also use lr:'...'
to specify a given language code.

However, if you're wanting to specify which of the localized search
engines your results are coming from (e.g., google.co.uk), you're
unfortunately out of luck.  There is no such provision that I know
of.  However, it has been requested in the issue tracker.  You could
star it (i.e., vote for it) at the link below:
