Just for clarification, is this a study of the technology itself (i.e.
history, development, contemporary impact) or is this a study of what
can be done using AJAX?

For history, as James suggested, the AJAX Wikipedia article is a great
place to start.
To this I might add http://en.wikipedia.org/wiki/XMLHttpRequest which
is usually the primary ingredient of AJAX.

For uses of AJAX, I might suggest looking at Facebook and Google Wave.
