As logging data is retained for 30 days <https://cloud.google.com/stackdriver/pricing_v2#data_retention>, you see all the versions including the deleted versions in the dropdown menu. However you may raise a feature request via the Issue Tracker <https://cloud.google.com/support/docs/issue-trackers> on highlighting or categorizing the existing/serving versions on the dropdown menu so that Stackdriver product team may evaluate it.
You should also be able to see the serving services logs.
