I just noticed today that email l sync over to Gmail (using Cemaphore's MailShadow for Google Apps Beta 2 product, which sync email via the GMail IMAP head), is now properly displaying, in the webmail interface, the FROM column data correctly (i.e., the actual FROM addressee is there). It used to show every synced email in the Sent Mail folder with "To: Me" in the FROM column.
Has Google just changed the IMAP interface or the webmail presentation interface to reflect the correct FROM info?
