So if you’re deprecating the ES5/3 mode, does that mean HtmlService will switch to the ES5 mode in the future?

I can't speak for Apps Script's release schedule, but that's the direction the Caja project is going.

You can switch to ES5 mode now; browser support is unfortunately variable, but may be adequate for your needs. For documentation on feature support and how to change modes, see <https://developers.google.com/apps-script/guides/html-service-caja>.

I have no idea what the cajoler is. Is that what you’re calling the server component? What is the designated replacement for that?

Yes, the server component. Modern Caja currently has no server component and processes content entirely inside the browser.
