You would need a custom IM client that allows certain actions when sending. (i.e Trillian or Miranda and probably gaim) and have this running on some always-on machine. Then make a plugin that translates messages into google calendar events.
Alternativly, create a plugin for one of the above mentioned programs that runns locally and pretends it is a IM protocol which has one contact that is always on. When you write this contact, the plugin API sends commands to Google and answers if your event was created.
