There are a couple ways you could affect the border around cells, either
individual cells or all cells of the same class.    See
https://developers.google.com/chart/interactive/docs/gallery/table  where
it talks about cssClassNames.  You'll probably want to provide styles for
headerCell and tableCell.

E.g.

  cssClassNames: { headerCell: 'myHeaderCell', tableCell: 'myTableCell' }

<style>
.myHeaderCell, .myTableCell {
  border-width: 0
}
</style>
