You can set the wiki tab landing page for your project on the "Tabs"
subtab of the "Administer" tab.  It looks like you already did that
but you want to change it.

You can set the default sidebar for all wiki pages in your project by
visiting the "Wiki" subtab of the "Administer" tab.  There is a field
to fill in the name of the page that you want to use as a sidebar.

By the way, it is also possible to set a special sidebar to appear on
specific pages only.  You do that by putting a "#sidebar" line at the
top of that .wiki file.  For full docs, see:
