Do you know if this error only occurs for this specific contact or if it happens for every contacts you try to update? I tried to reproduce your issue, but I successfully updated my contact given name and address' country.
Have you tried with a test gmail account to see if this error is linked to the account you're using? This shouldn't throw this kind of error, but have you tried adding "GData-Version: 3.0" to your request header? I hope this helped!
