My contact I made for myself never stays updated. I delete old numbers from my contact, add my birthday, change screen names. When I do a sync, it reverts back to the old data. I'm using a HTC Thunderbolt and am not using Verizon's Backup app to avoid that as being the culprit.
I've even changed it online through a PC. I even restored my phone and didn't link it to the contact designated for myself that usually appears at the top of your contact list. This is really irritating. I never had issues with contacts on my iPhone.
