Hi,

Re: "How can I get the viewers email address?" - I just don't think
Google allows anyone access to the logged in user email for security
reasons. You more then likely will need to have them enter it instead
of trying to take it. ;-) They may eventually release some feature or
something (it's all still in development/sandbox), but I am not aware
of anything currently.

Re: "If one is not logged in, he is never able to add a gadget
somewhere?" - Anyone can add (or view) a gadget to iGoogle even if
they are logged in or not, they are also available under syndication
(add to websites, blogger, google pages/sites etc) and with other
social containers like Orkut (although not all features may be fully
supported). The only real exception to this was the inline gadgets,
but they are no longer allowed.

"In other words - can I assume, the a user, who uses a gadget is
logged in to a google service?" - No

Hope that helps,

Cheers!
