The example I provided (http://www.umaitech.com/sand/
example_map_slimbox.htm) calls up Slimbox.open from within a
createMarker function. If you're using an external data source with a
CDATA section, you don't need to escape the quotes with backslashes.
So, you should be using:
<a onclick="Slimbox.open('Image', 'Caption');return false"
rel="lightbox">
Also, you might want to look at the Moolet Google Maps Joomla module:
http://www.moolets.com/content/view/46/152/
Since it's already using Mootools and Slimbox, you might be able to
customize it to suit your needs.
