There's three big questions that need to be addressed: 1. What do you mean by "turn and street icons"?
2. Where do you think you are going to get the information from that determines whether to display a turn icon or a street icon? 3. How do you display the icons in the directions list? Of those, I can only answer the third one. If you tell GDirections to display the directions list, then what you see is what you get. There are no options to tell it to do anything else (other than applying styles to the div that contains the list, and even then GDirections countermands some styles). If you want to make any changes at all to the list layout, you need to construct the whole thing from scratch by reading through the GRoute and GStep information.
