Mike's tutorial is the best start. But it shows how to hide/show a single category. The great folks here helped me to make a system for showing/hiding any combination of a number of categories: http://lovebunnies.luckypro.biz/01_stuff/roman_holiday/romanholidaymap.html . That may be more than you need. If it's any help. feel free to crib away.
And I don't know how you would apply different styling to different categories.
