Well ..., yes, but the point is that, although data comes from
different sources, Google could, (and should), put it out in one, and
only one format, defined by Google themselves, and not dependant on
what's available or who the provider is.

In my mind this is a simple thing to do: Just define fields A, B, C,
D, etc..., and on each query, return whichever fields you have data
for. For those fields where you have no data return an empty string,
but let the field be present in the output anyway.
Then we would know what fields to expect in the applications we write.
